Melvin by Martín Berasategui, the restaurant located at Abama Resort Tenerife, part of the 5-star hotel resort Las Terrazas de Abama Suites, has recently become a laboratory for creativity. Taking advantage of a visit by Xuan Lan, currently the leading name in yoga in Spain and Latin America, Chef Diego Dato, Melvin's chef de cuisine, worked with her to design a healthy and very fresh set menu, now available to customers upon request.

‘A proper diet not only helps you feel better physically but also emotionally,’ maintains the high-profile yoga instructor, who worked hand in hand in Diego Dato’s kitchen during Abama Wellness Week, choosing local ingredients from the Canary Islands, selecting the dishes and designing the structure of the tasting menu.

The final result of this culinary undertaking, which was made available to diners on one night of the week devoted to wellness, included appetizers: sourdough rolls baked in-house and served with housemade caramelized onion butter, and teriyaki-glazed fresh rolls filled with sea lettuce and bigeye tuna.

The starters were followed by four main dishes: beetroot carpaccio with avocado mousse and fennel foam; Atlantic sea bass ceviche with sweet potato and kumquat; slow-cooked organic egg with cauliflower purée, pumpkin juice, vegetable couscous and crispy royal quinoa; and steamed hake with dashi, a staple of Japanese cuisine, slightly spicy with a hint of tomato. The meal ended with desserts, one of Melvin’s strong suits, featuring special melon balls in caipirinha with lemon peel ice cream and yoghurt soup.

Xuan Lan, whose popularity skyrocketed following her live solidarity videos during lockdown – tripling her number of followers on YouTube, now totalling over 1,400,000 subscribers – chose Abama Resort to relax and work on videos for her new platform, Studio Online, which offers yoga and wellness content.

Without a doubt, the values promoted by the Parisian of Vietnamese origin include a healthy diet. Prioritizing minimally processed and locally sourced natural products, limiting salt, and avoiding sugar and artificially sweetened foods are some of Xuan Lan's tips.

For those who aren't able to visit the Martín Berasategui restaurant at Las Terrazas de Abama Suites, the private residential resort managed by My Way Meaningful Hotels, Diego Dato offers two recipes that cooking buffs can easily prepare at home: beetroot carpaccio with avocado mousse and fennel foam, which will require a blender and soya lecithin, and a laborious sea bass ceviche with Lanzarote sweet potato and kumquat. Note that for this dish, you will need a food processor and a chef's torch.
