The tasting menus, designed by the master, include a special selection of local products that make up a unique culinary offer with a markedly island essence.

Tasting Menu Alma:
Tuna Carpaccio from “El Hierro”, dressed with passion fruit vinaigrette, hints of soy-cured egg yolk, and red onion rings.
Fennel Pearls, prepared raw, as a risotto, and emulsion.
Oxtail-Stuffed Cannelloni, served over a creamy foie gras sauce and mushroom béchamel.
Creamy Puntalette with red prawn and crispy pancetta.
Crispy Suckling Pig, accompanied by green bean cream, rhubarb, and mini corn glazed in its own juice.
Mimetic Lemon, filled with champagne sorbet, gin granita, and basil-lime ice cream.

Galician Steak Tartare, served with crispy toasts.
“El Hierro” Tuna marinated in ponzu sauce on a light almond cream.
Seabass in a Crispy Crust, served over ajoarriero sauce and roasted leek cylinders.
Señoret-Style Rice with red prawn.
Galician Dry-Aged steak(45 days aged).
Mimetic Lemon, filled with champagne sorbet, gin granita, and basil-lime ice cream.
Banana Ice Cream, with chocolate sponge cake and caramel, accompanied by a light Baileys sauce.
