*El Hierro tuna carpaccio dressed with passion fruit vinaigrette, hints of soy-cured yolk and red onion rings
*Grilled scallops with green mojo sauce
*Cannelloni stuffed with oxtail on a creamy foie gras and mushroom béchamel
*Crispy suckling pig accompanied by citric yoghurt foam, light pear and Pedro Jiménez sauce
*Mimetic lemon filled with champagne sorbet, gin granita and basil and lime ice cream
Esencia Tasting Menu:
*Galician sirloin steak tartar on crispy toast points
*Crusted ajoarriero sea bass and roasted leek cylinders
*Señoret rice with red shrimp
*45-day dry aged Galician beef tenderloin
*Mimetic lemon filled with champagne sorbet, gin granita and basil and lime ice cream
*Banana ice cream, chocolate sponge cake with caramel and a light Bailey’s sauce
